The recipe for eclairs

Ingredients for dough

  • 250 ml of milk
  • 100 g of butter
  • 150 g of flour
  • a pinch of salt
  • 4 eggs

Ingredients for custard

  • 400 ml of milk;
  • 2 egg yolks;
  • 1.5 tbsp. l. flour;
  • 1.5 tbsp. l. starch;
  • 80 g of sugar;
  • Vanillin to taste.

Preparation of the dough

Mix the milk, melted butter and salt in a saucepan. Sift the flour into this mixture and put the container on medium fire for a few minutes. In this case, stir intensively with a wooden spoon. After taking off the pan from the stove and let it cool down a little. Then start to constantly beat the mixture, adding eggs one by one. Mix until a homogeneous mass is obtained. Harvested dough pour into the confectionery bag. If you still do not have such a useful thing, then use a plastic bag, cutting off its corner. Put a baking sheet with parchment and squeeze the dough out of the sack onto it. The length of the stripes should be about 10 cm. Leave a distance between them about 5 cm. Preheat the oven to 180 C. Bake the eclairs for 25 minutes. Then take them out of the oven and make holes in them to pour in a delicate custard .

Custard preparation

Whisk yolks with sugar and vanilla whisk. Gradually pour the milk and sift the flour, without stopping to mix. Then add the starch. Make sure that there are no lumps. Place the cream in the microwave for 5 minutes at maximum power. When the cream is ready, let it cool down a bit, then fill it with eclairs. The fields are ready-made pastries with melted chocolate.
