Ingredients

3 eggs
175 g of chocolate (milk)

Preparation

Separate the proteins from the yolks. Put the proteins in the refrigerator.

Break the chocolate into small pieces and melt it in a water bath.

Then beat egg white with a mixer until a dense and stable mass is formed (until solid peaks).

Mix three yolks with slightly chilled chocolate.

Then add a third of the whipped egg whites to the chocolate mixture. Whip the mass with a whisk.

The remaining egg whites are stripped in half and add one by one. Mix them already with a spatula.
